BALTAZÁR, Castle District, Budapest

THE PAST:

After a number of changes of owner between 1831 and 1952, the two buildings which now house Baltazár Hotel, grill restaurant, wine bar and wine store, were taken over by the Hungarian Government, who made them the state printing office. In 1994, though still protected by the Government, they became the property of Municipality of the Buda Castle from whom, since 2013, they've been rented by the Zsidai family. Previously, in 1982, the family acquired the right to rent the building housing their Pierrot Restaurant, in nearby Fortuna Street, from the same authority.

THE PRESENT:

Baltazár is today a Budapest institution, a family-owned urban resort – combining a quirky and characterful boutique hotel, plus popular grill restaurant plus wine bar, and wine store - located in the city’s historic heart, the Castle District.
And, whilst only Baltazár is also a hotel, the Zsidai family now owns and runs another five eateries in the city. They are Pierrot, 21, and Pest-Buda – all in Fortuna Street on the Buda bank, and Spíler and És on the Pest side of the city. All are dedicated to restoring Hungarian cuisine to its pre-war glory, under the direction of chef Zsolt Litauszki; each is distinctively different.
Pierrot, located in what was a 13th-Century bakehouse, offers modernised cosmopolitan cuisine of the Austro-Hungarian monarchy.
A modern bistro, 21 serves traditional Hungarian cuisine, as in the ‘good old days, but lighter and updated to the 21st Century..
Pest-Buda, housed in what was originally an inn, is grandma’s home-style Hungarian kitchen.
A cool and laid-back bistro-pub, Spíler offers quality street food plus Hungary’s best micro-brews and wines, and is a popular haunt of downtown locals.
És, at the Kempinski Hotel Covinus Budapest, is a wine bar, beer pub, terrace, bistro, restaurant – and a great place for socialising. It steers away from traditional dining concepts with its menu in three parts: nibbles to share; typical Hungarian and Viennese dishes; grilled meats and fish.

THE PLACE FOR YOU?

Yes, if you want to be based in the historic heart of Budapest. Yes, if you like smaller hotels, warm and friendly family-run hotels, and hotels with character - this one is positively quirky! And yes if you would like to find great food and good wines on the spot: Baltazár has both, in abundance.

THE PROPERTY IN DETAIL:

RELAXING
The hotel’s bedrooms and suites all offer private seating areas, where guests can relax in comfort and privacy.

EATING & DRINKING

Baltazár’s grill restaurant is spread across a large, funky room with banquettes, tables and chairs, and an inviting, cobble-stoned pavement terrace. The kitchen features a charcoal grill, hand-made in Spain by Josper - reputedly the world’s best, the brand is favoured by top chefs including Heston Blumenthal and Gordon Ramsay – and fired with only the highest-quality charcoal from Argentina.

Dishes are simple yet creative gourmet street food; meats predominate, but there are vegetarian options, too. All feature high-quality ingredients: USDA Prime beef from Dakota Dunes, South Dakota; 21-days dry-aged beef and dry-aged Duroc pork from Styria Austria; Duroc pork from Hungary; duck from a family supplier in south-east Hungary; free-range chicken specially bred for the restaurant in south-west Hungary; plus homemade sauces and jams, prepared in season in the restaurant kitchen.

The adjoining wine bar has a selection of the best and most authentic wines from the Carpathian Basin and some of the most important of Central Europe (also sold in Baltazár’s Terra Hungarica wine store) as well as some of the best gins the world has to offer.
