POSADA LA PASTORA, Uncastillo, Zaragoza

This beautifully restored old house sits at the very heart of the medieval hilltop village of Uncastillo, which is still dominated by the remains of the one castle after which it was named. The building, in which up to four families would live, with their horses and donkeys on the ground floor, was in ruins when current owners, Miguel and Inma, bought it. After a major overhaul, designed to preserve the historic features of the property – including wooden beams, old flagstone floors, terracotta tiles and traditional wrought-iron grilles - they opened its doors as a hotel, which they named Posada La Pastora, in the spring of 1999.

Today, this charming property offering a delightful blend of warm welcome, friendly personal service, historic character and cosy home comforts – including air-conditioning and underfloor heating. Great attention has been paid to detail, and the hotel prides itself on pampering the senses, with lavender scents at the entrance, local flavours at breakfast, music to accompany your stay, soft bedlinens to caress your skin, and a peaceful, welcoming atmosphere.

Yes, if you like to go off the beaten track, prefer a small hotel and want to feel you are staying with friends, who share your likes and your interests. Emphasising the infomality that pervades here, guests can check in at any time – if rooms are not ready, luggage can be left at reception. (If you expect to arrive later than 8pm, please call and advise the hotel.)

And yes, if you’re a nature-lover, bird-watcher or keen cyclist: this region of Spain has forests, lakes and gorges as well as the unique and remarkable lunar landscapes of Bardenas Reales Natural Park.

The buffet selection includes juices, fresh fruit, an assortment of tortas (cakes) and bread from Uncastillo, plus a selection of local artisanal charcuterie and cheeses. Accompaniments include olive oil, tomato and jams, plus hot chocolate, coffee, tea and various infusions.
